Grilled Chicken and White Bean Salad Stuffed Pitas

Smokey grilled chicken pairs with delicate white beans and herbed vinaigrette dressing to make a fabulous healthy sandwich filling. If you don’t want bread, serve in a hollowed out tomato shell or on a bed of lettuce instead. Makes 4 cups of sandwich filling. 1 cup per serving.


2 grilled chicken breasts, diced

2 (15-ounce) cans white beans, rinsed and drained
1/3 cup minced sweet onion

1/2 cup minced celery

1/4 cup minced fresh Italian parsley

2 tablespoons lemon juice

1/4 cup Cannabis Infused Olive Oil*


1 teaspoon minced garlic

Salt and pepper to taste

1 cup salad greens
4 pita bread halves


In a large bowl, toss together diced chicken, beans, onion, celery, and parsley until well mixed. In a small bowl, whisk together the lemon juice, Cannabis Infused Olive Oil, garlic and salt and pepper. Toss dressing with chicken mixture until all ingredients are well combined. Divide salad greens and sandwich filling between the 4 pieces of bread, stuffing each pita pocket.
